Here is an excellent recipe for crockpot oatmeal using steel cut oats from Alton Brown at Food Network. It is so simple, yet so good. Start it on “low” for the first 1-2 hours, then dial down to “warm” for the overnight cooking. No need to use sugar: the dried cranberries and figs make the oatmeal plenty sweet (though I prefer dried mixed berries instead). Sprinkling with walnuts adds a tasty protein crunch. It freezes well, too. After reheating, you’ll need to add some milk.
