One way to get kids interested in eating better is to get them involved in the kitchen.  Last week I asked one of my patients to send me his recipe for one of his favorite foods.  His mom typed it up for him and emailed it to me.  Here it is!

dominicDominic loves chicken nuggets, but mom thinks that they are not that good for you if you get them out at a restaurant and who knows what is in the frozen kind. Here is a version that Dominic has come up with that is healthy and yummy and quick.

 

Dominic’s Nuggets

serves 8

 

1+ c plain bread crumbs

3 tsp paprika

1 tsp garlic powder (adjust to your liking)

1 tsp dried oregano

1/2 tsp red pepper flakes

2 beaten egg white

2 lb skinless, boneless chicken breast cut into 1 inch chunks

 

In a plastic bag, combine crumbs and seasonings. Place egg whites in small bowl and beat with a fork.

Dip chicken pieces in egg, allowing the excess to drip off.

Add chicken chunks a few at a time to bag and shake to coat.

Place on a sprayed 15x10x1 baking sheet and bake at 450 degrees for about 7-8 minutes or until no longer pink (maybe longer depending on the actual size of your chunks)

 

185 calories per serving, 12 carbs. ( We count carbs as Dominic is a type 1 diabetic)

 

This looks great!  I bet the red pepper flakes give it a nice kick!
